Culinary Camp for Young Chefs: A Mexican Fiesta!

Join us for a 2-day adventure heading south of the border, where Chef Dan with instruct on the basics of Mexican cookery, and teach the skills and techniques required to reproduce some traditional favorites from around the country! We’ll be using authentic ingredients and teaming up to create a host of flavorful dishes – some spicy, some not – and over the two-day camp, you’ll learn the fundamentals to reproducing these menus, with instruction on everything from knife skills, braising and home-made tortilla-making, to salsa variations and the secrets to seasoning and spicing. Menu includes both quick and easy everyday dishes, to more complex classics. Price is per person for the 2-day course. Ages 11 and up.
Day 1 – Menu includes: Pico de Gallo; Guacamole; Chile Verde (Pork Green Chile); Fajitas 2-Ways (Beef, Portobello Mushroom); Cumin Lime Rice; Grilled Corn with Black Beans and Fresh Jalapenos; Hand-made Flour Tortillas; Churros with Hot Chocolate Dipping Sauce.
Day 2 – Tortilla Soup; Grilled Shrimp Salad with Roast Poblanos, Red Onion and Queso Fresco; Popusas (Stuffed Hand-made Corn Tortillas with Bacon, Chipotle and Cheddar Cheese); Mango Salsa; Roast Tomatillo Salsa; Roast Chicken in a Classic Red Mole Sauce, Blue Corn Grits and Roasted Butternut Squash; Mexican Flan with Caramel Sauce.
